Oh man. There's so many kinds of anime with so many various genres: Giant
robots, mutant/demon transformation, magical girl, adventure (either fantasy
or sci-fi or a blend like Trigun), romance, pretty boys, hentai (aka porn,
or most often tenticle porn), etc. I'm not sure what all you would like, but
here's some I do:

Akira - OMG CLASSIC.
http://www.animenfo.com/animetitle,33,xmjics,akira.html

Alien Nine - Three young girls wear aliens on their heads and fight other
aliens. This only has one DVD of 4 episodes so far, but I wish they would
make more.

Ai Yori Aoshi - Romantic
http://www.animenfo.com/animetitle,866,ddvgck,ai_yori_aoshi.html

Argento Soma - Sort of like a modern version of Neon Genesis Evangelion but
without all the angst of childhood.

Cowboy Beebop - Adventure. Space cowboys.
http://www.animenfo.com/animetitle,114,tzoabg,cowboy_bebop.html

Devilman Lady - This is part of the demon transformation genre. It's
actually a newer series based on the older Devilman show. It holds up well
and the newer animation is nice. And it doesn't have the hentai aspects that
so much of this genre have (*cough* Urutsokidoji *cough*).

Ghost in the Shell
http://www.animenfo.com/animetitle,181,aswrgy,ghost_in_the_sh.html

Ghost in the Shell: Standalone Complex - TV series based on the movie.
http://www.animenfo.com/animetitle,1068,sgszbd,ghost_in_the_sh.html

Grave of the Fireflies - Historical drama. The serious side of anime.
http://www.animenfo.com/animetitle,190,nenweg,grave_of_the_fi.html

Legend of Black Heaven - Adventure, sort of. Mid-life crisis story about a
salariman who tries to relive his youth and save the planet with his guitar.
I liked this one a lot even if it was really hokey.

Najica Blitz Tactics - Adventure. And panties. This is a fun, women as 007
type adventure but it's also amazingly funny because of the over-the-top
"fanservice" (which is what they call panty shots).

Neon Genesis Evangelion - OMG CLASSIC. Giant robots, end of the world, and
childhood angst. This one is so good and SO maddening.
http://www.animenfo.com/animetitle,284,prlbgu,neon_genesis_ev.html

Ninja Scroll - Ninjas! I personally think this one is overrated, but it's
the measuring stick by which so many action anime are judged.
http://www.animenfo.com/animetitle,289,xgxvsm,ninja_scroll.html

Noir - A pair of women assassins take on a secret organization that quietly
rules the world.
http://www.animenfo.com/animetitle,290,kjccvj,noir.html

Rurouni Kenshin - Samurai adventure. I think if you liked Trigun then you'll
like this a lot too.
http://www.animenfo.com/animetitle,317,ylrdkg,rurouni_kenshin.html

Serial Experiments Lain - Not sure how to categorieze this one. Modern day
story about a girl, technology, her psyche, reality, and of course the "who
am I" question.

There are lots more that are good too and if someone here says I missed
something, I won't argue. Some others that are really classics that might be
more than you want to take on:

Star Blazers / Space Battleship Yamato - Space Adventure. This one is a real
classic. 1974 classic. I watched it back then and still have a fond spot in
my heart for it, but I've watched it again and I would say that unless you
really, really love anime that you can skip it.

Robotech - Space Adventure / Giant Robots. Older TV series (1983) that is a
foundation to so much anime. Like so many american versions, this overall
series is a rebuilt story from various shows in Japan.

Hentai -- WARNING NOT FOR THE FAINT OF HEART

Hentai is porn. Dirty, nasty, disgusting porn. With tenticles.

Urotsukidoji - Really, after this one do I need to list any others?

Have fun
