Oh man. There's so many kinds of anime with so many various genres: Giant robots, mutant/demon transformation, magical girl, adventure (either fantasy or sci-fi or a blend like Trigun), romance, pretty boys, hentai (aka porn, or most often tenticle porn), etc. I'm not sure what all you would like, but here's some I do:

Space cowboys. http://www.animenfo.com/animetitle,114,tzoabg,cowboy_bebop.html Devilman Lady - This is part of the demon transformation genre. It's actually a newer series based on the older Devilman show. It holds up well and the newer animation is nice. Mid-life crisis story about a salariman who tries to relive his youth and save the planet with his guitar. This is a fun, women as 007 type adventure but it's also amazingly funny because of the over-the-top "fanservice" (which is what they call panty shots). http://www.animenfo.com/animetitle,282,twkqnj,najica_dengeki_.html Neon Genesis Evangelion - OMG CLASSIC. Some others that are really classics that might be more than you want to take on: Star Blazers / Space Battleship Yamato - Space Adventure. This one is a real classic. 1974 classic. Older TV series (1983) that is a foundation to so much anime.
