You don't need iTunes at all to use an iPod (musicmatch, winamp, ephPod, CF)
And you don't need an iPod to use iTunes (I use it for managing my mp3s). You do need iTunes to use the iTunes Music Store, but once I dl an audio file from them, I immediately burn a CD and rerip it as a DRM-free mp3 file.
