When you POP your mail, the complete message is downloaded, you may have a setting where it is still stored on the server for X amount of days but in the end, POP is generally geared twards people who like to keep their mail off line. IMAP initially only downloads headers, then downloads the complete message when you go to read it, it also stores your messages on the server for ever so now you can go back and check your mail from another device and see the same set of messages. I believe the outbox is also stored on the server.
