I've used with POP and IMAP. Right now I am strictly POP, but I just moved
my business mail to an Ubuntu server running XMail. I might add IMAP support
through Dovecot or Courier.

The goofy thing I find about IMAP support in Outlook is how when you
"delete" messages, they don't fully go away, you have to then specific purge
deleted messages from the server. Kind of annoying. Still, server-side mail
is cooler overall.
