My brother does stock-car racing (mostly quarter-mile drag racing) and a huge part of his build out was the safety features. He hasn't updated it in a loooong time but here's his page describing his car: http://www.grapeaperacing.com/GrapeApeRacing/camaro/index.cfm He built his roll-cage himself (he wanted the car to look stock outside, but inside all bets were off and nothing off-the-shelf would work well) and there are insanely precise rules for the safety features. I'd guess NASCAR's puts them to shame...
