Yup, and maybe the person might not even know CF but want to learn.

That means I'd ask about their last big project: what was it, what was
their part, how did they approach the problem, what was the result,
why did they do it that way, et al.

I'd also ask why they're applying for a CF job and/or this specific job.

You could also tell them, generally, what you're working on and ask
them how they'd approach the daily tasks you're doing now.  When the
person tells you something or an approach you hadn't thought of,
that's your candidate.
