Sweet dude. I have been to all of your destinations when I did a cruise except the Bahamas. When you go to the Caymans, by all means go on the swim with the stingray's excursion. It is a blast. Shallow (about 4') sand bar that you stand in. Stingrays swim around you. You can get a mask/snorkel and underwater camera and get great shots. Buy a cup of squid and you can feed them. You can also hold them in your arms. So much fun.
Ocho Rios - swim with the dolphins, and make sure you climb the waterfall. Lots of fun. I would say that 2K is enough. I went with 1K and a family of three and we did fine. Of course if you or your significant other (assuming you are bringing one) is into jewelry then you might need some more. Cozumel and Ocho Rios - they will haggle with you. In fact, the Jamaicans feel insulted if you don't haggle. Caymans though are another deal. They don't haggle and they are pretty pricey. Have a great time.
