I did that same cruise on the Star Princess in 2005. My wife and I drank a lot, almost $800 worth in the 7 days. All alcohol is cheap on a cruise.
Are you going to gamble? Buy stuff on the ship? Shore excursions? I usually put $1000 in cash down on my account at the beginning of the cruise and the rest goes to a credit card. When you board the ship, you will have to register with a credit card for on board charges.
