I use Google apps as well and don't use Outlook at all anymore. I sync my iPhone to Outlook mainly for backup purposes, and in case I have alot of data entry to do. I haven't yet needed a phone number while in GMail, and the typeahead for email addresses in GMail is so good that the email addresses are almost always already in there.
For calendars I just use the iPhone exclusively for my calendar and again use Outlook for backup purposes only. Really, Once I thought about it, I'd been trained by Outlook and Microsoft to *need* a desktop calendar and contacts program. I started using Google apps and tried to use it's calendar and contacts too, but in the end I found I simply didn't use it or need it. I always have my iPhone with me and I don't actually need the desktop version.
