Gevalia is really good too...I was one of their customers for years.  I
never had the problem of coffee piling up as I drink a lot of coffee hehehe.

It might be Community coffee since they are a Cajun restaurant.  More than
likely they serve the coffee that has chickory in it, which is a Cajun
specialty developed during the Civil War when coffee supplies ran low.
Chickory really smoothes out the flavor and is very yummy.  It is actually a
weed in the endive family that you commonly see on the side of the road with
the long dusty green stalks and bluish/purple flowers.  They take the roots
and roast it like you would a coffee bean, then mix it in with the ground
coffee.  Community Coffee can be ordered online
(http://www.communitycoffee.com) and is a very excellent coffee.

I love the boudin that Pappadeaux's serves...it's the only place I have been
able to find it in the Chicago area.

I had some friends that signed up with Gevalia years ago.  I went over to
their house one day and got a glass for water.  When I opened up the
cabinet, they probably had around 25lbs of coffee stored on the top.  They
couldn't keep up with how fast Gevalia was sending it :)


oh, and I remembered my 2nd question.  Does anyone know what coffee
Pappadeaux's restaurant serves.  I had it there on Father's day and thought
it was pretty damn smooth and rich.
