I've seen the term used for a wide spread of things that can all be
termed as religious - though almost always Christian religious. I've
sometimes seen it applied to Jewish religious (along with the
Christian) but never to Islam, Hinduism, or any other religion. So is
it a 'stealth' way of saying Christian, religious Christian or
fundamentalist Christian?

That being said, there are place where I do know exactly who
creationist are. When some group is trying to include  a religious
understanding of creation into public schools, I know those are
creationists and they have to be stopped. When some group is trying to
suppress scientific advancement because it conflicts with their
understanding of creation, those are creationists. When I hear
creationists, I hear what amounts to a Luddite.

I know lots of people who have no problem accepting the Jewish
understanding of creation and also be on the cutting edge of science.
I know of a Kabbalist who was also a respected physicist (For Eric -
Aryeh Kaplan, author of the translation of the Sefer Yetzirah that is
probably on your shelf). I myself am a firm believer in God's hand in
creation and anyone who knows me knows I'm far from a Luddite. :)
