One other think that helps a lot is to tag frequent, before and after
each merge for instance, so you can roll things back quickly. Also
before deploying, create a Tag as well. Then deploy using that tag.

Done right you can use something like Ant and Hudson to control your
deployments etc. It makes it much less error prone, as there are less
people in the mix.
