I usually just open the log file with a text editor :-)

At any rate, if there are no entries in there then, as far as CF is concerned, the 
email has been delivered.  At that
point, it's up to your email server to deliver it and if it does or doesn't there will 
be no indication in your CF logs
as to what actually happenend to the email.
