It sounds like pipestone is a somewhat soft stone that lends itself to
carving. I found this site http://www.greatrough.com/rough_carving.shtml
with a picture of both, but where I come from soapstone is usually green or
brown. Soapstone is widely used in Inuit (Eskimo) carving - they get the
finest grade and most beautiful pieces of stone - the commercially available
stuff is nice for practice but pretty uniform and less interesting. P.S. I
did make a few pipes with soapstone and marble! :-)
