Depends on your definition of complex, now doesn't it?  IIRC, sucrose is the
simplest stable carbohydrate configuration (though it's still freakin' huge
by nonorganic chem stgandards).

Sugars are defined as 'simple' because they're smaller than, for example,
starches or cellulose.
