Yep - that's it exactly. Sloppy good with some sour cream, too. My hubby
worked at a Mexi place called "Pancheros." It was one of those local
chain-type places in Iowa, but it employed lots of Mexicans and had a
semi-authentic cooking style. He described their tacos and I just fiddled
around until I got something that he deemed to be "close enough." He'd have
us eating Mexi every night if I'd let him.

Okay, anyone got any really good Thai or Lao curry recipes? We do a weekly
meal swap with our neighbors, and I have a hankering for making a big pot of
some hot curry coconut chicken potato onion kind of thing. Or, maybe squash.
That could be good, too.
