When I worked at Charley G's in New Orleans, I was the saucier, and I got to
make all the soups daily from scratch. My absolute favorite soup is Turtle
Soup. God was it good. Followed closely by duck n' andouille gumbo.

I should mention for those who don't know, that picking a turtle up by
the head or tail will severly injure it and likely kill it. I pretty
much don't pick them up unless I need to and I'm not worrying about them
living.
