On your diet, the chicken leg was your protein, with a little from the cheese. TONS of carbs in there.
For vitamins, Centrum or the Wal-Mart/et all equivalent are fine. As far as mega-dosing, it can go 2 ways. Water soluble(vitamin C for example), your body with get rid of via fluid(to be polite), so extra is really just a waste. Fat soluble will build up it you take too much, and can make you sick. Vitamin A/beta carotene, for instance, will turn your skin and eyes a jaundice-like yellow/orange, and can even damage your liver. Also, to much minerals, and protein(I think), can give you kidney stones if your water intake is too low. The tons of water a day is the best thing you can do as well, especially to avoid the problems I mentioned.
The recommended intake is a gram of protein per pound of bodyweight, that is more than enough. But really, just try to balance your diet.
Me:
Breakfast: 3 egg whites and one whole egg scrambled, wheat toast with humus, oj, milk.
Apple or whatever for a snack
Protein bar/breakfast bar before gym
Shake right after work out(you have a �-1 hour window after exercise during which your muscles will suck up glucose/glycogen(?) for the next workout)
eat lunch a half hour later, usually a sandwich super heavy on turkey or whatever, or leftovers from last nights meal).
After noon shake(half saved from earlier)
Dinner Broiled fish, frozen veggies, brown rice
Maybe a little shake before bed if I'm feeling a little burnout/overtrained.

Sunday - 20 slices of pizza, 2 bowls of rice (mixed with soup), Root beer
Monday - 1 large bowl of vietnamese noodles, 4 eggrolls, 2 bowls of rice mixed with soup, 1 large bag of BBQ chips, 10 Jolly Rancher lolipops
Tuesday - 2 eggrolls, 2 servings of rice and veggies, 1 leg of chicken
Wesnesday - 12 slices of pizza, 2 servings (1 serving = 1 cup) of Campbells's chunky soup, 3 Jolly Ranchers lolipops
Thursday - 2 servings of Campbell's chunky soup (clam chowder, yum!), 1.89 liters of apple juice, 1 can of pineapples
Lots of water everyday. Looks like i dont have enough meat. i need more meat right?! :-D
Hopefully there will be some good food at mom's house tonight
on Friday, i will be doing the pizza thing again. Cos CiCi's pizza rules. pizza buffet for $3.99, can't beat that!

I would try to maintain fiber intake just for the health benefits though. It is pretty easy to get a good amount of fat in your diet; it really does not take that much. You will put on more weight by eating a lot of quality calories than crap calories anyway. Carbs are ok, but protein is what you want for weight gain. A good multivitamin is a good idea as well.
Also, high fat intake also increases testosterone levels, which will help you pack on a few pounds of muscle. Your best bet is weights with light cardio(cardio reduces testosterone levels/muscle growth rate). You can ignore the exercise part of the equation, but you will be hard pressed to put on any weight, fat or otherwise, without doing do. Also, you will probably find that you will eat more if you are working out I know I eat like a bird and drop weight if I'm not making it to the gym, but, like Phillip said, everyone is different.
