Did you try to set on the debuffing options that show these variable on
each return of the browser ?  Then you can see what CF sees.

I know there are some servers that do not support or can't access 
certain cgi varables. Why?

Does anyone have a list of the reasons/work-arounds?

for instance, my linux box can't seem to generate the following:
