I really belive this is a clodfusion server issue though and not the search 
engine.

If I have everything running ok and enter a valid license - I immediately lose 
the verity k2 server link on the left nav for the admin page, I still can 
access all my collections. When I restart the server all verity collections are 
gone.

Removing the license and restarting the coldfusion server restores everything. 
In that process I never restart the verity search engine.
