In the last 2 weeks I have worked on the WCS 2.0 extension for
CF-netCDF3.0. The first part of the specification introduces a new
(and refined) version of the CF-netCDF3 data model mapping to ISO 19123.
Ben, in my opinion that part could be an excerpt of the OGC CF-netCDF
specification.
The second part of the document, defines the CF-netCDF3 data model
mapping to the GML-Coverage profile used for the WCS 2.0.
Presently, I am working on the WCS 2.0 service model extension.

It's a bit out of date now, but Stefano developed a UML diagram for
CF in an ESIN article which maps the Unidata Common Data Model to
the ISO 19123 Coverage specification:

Ah, I found it soon after I'd sent the email! The one I'm thinking of
is in Nativi et al 2008 (DOI 10.1007/s12145-008-0011-6). I think there
may be other ways of expressing the CF data model though (and I think
there are some small mistakes in the Nativi et al rendering). Has
anyone produced any alternative representations?
