That's probably what you've broken. CF maintains a list of datasources that are created through the CF Admin interface. Deleting the ODBC Datasource via the Control Panel doesn't remove this, although the Datasource is no longer available via CF Admin. As Stephen says a restart of CF might help sort things out.
