I added the JRun settings to the VirtHost declaration and now apache is displaying a default 500 error page instead of the previous IE 500 page. The error log indicates: Invalid method in request <80>L^A^C
Within the VirtHosts JRun settings, I then uncommented the error URL and that displayed fine and now apache displays my custom error page. (i.e. the VirtHost seems to be behaving well, still, except for .cfm pages)
I set the VirtHost JRun SSL setting to true.
