This is not so much a solution as another question, but the answers may
help you too:

What is CF's memory cleaning like?  Are queries and connections etc
cleaned up properly without any manual intervention?

More often than not this is caused by a query that is returning a HUGE
record set.  Look for long running pages to help you find where this is
happening.  You may also put a trace on your DB so you can see what
queries are running in the time frame of the memory usage spike.
