I'm not sure if you're using CF7 or CF6, but in CF7, just make sure you have the latest updater, on cf6 there is a specific hotfix for server stops responding:

If a request is sent to ColdFusion MX before the ColdFusion application is fully loaded and running, ColdFusion will not serve requests. And this one: http://www.macromedia.com/cfusion/knowledgebase/index.cfm?id=f7736ad Macromedia JRun 4.0 can hang and refuse to service requests, even under light load, when the thread pool reaches 0.
