Apache FOP can be used to convert XSL-FO into a variety of formats, including both PostScript and PDF. I've played with it a little and had trouble using it directly from CF (even CFMX), but after acquiring a more CF-friendly Java class it was easy to use (well, easy once you get over the XSL-FO learning curve).
