This will only be used for email within my own company - so I have been told.  

I tried the solution that was mentioned before about sending the message to myself and 
then viewing the headers but as usual my company has disabled this feature.  So I am 
still looking for a list for Outlook 2000 -

Don't do that on mail going out into the outside world, it is a big 
no-no in many spam filters.

As for the rest of the headers, they are either in an RFC or they are 
custom (which means they start with X- and behave unpredictable).
