I agree with Dan and would test this locally as much as possible. Many groanful years of dealing with CF mail (prior to 6.1 of course).
TEST locally and try the new settings (eg spoolenable) in MX 6.1. It could be that MX has got to the stage where the mail server can't keep up. Nirvana?
