Most books out there aren't targeted to assured CF developers :-((
Forta's Advanced book may be a good choice, "Programming ColdFusion MX" from
Brooks-Bilson is definitely worth a check, especially since it was writtent
with CF 6.1 in mind. You can check the TOC and get a sample chapter here:

Talking about CFCs, the Techspedition is good, but it covers CF 6.0 and many
important issues related to CFCs were solved with 6.1, making it already a
bit outdated:
