Sams Teach Yourself ColdFusion in 21 Days
by Charles Mohnike

I would say this book is the best for beginners, because it's very fun! The "21 Days" will probably fly by in 3 or 4. It covers the bare bone basics wonderfully and dips in deeper from time to time as if he's telling you insider secrets that no-one else knows. :)

It's an older book, so it only covers CF5, but in the balance i would still highly recommend it for someone new to both programming and CF.

Moving on into more advanced stuff and CFMX, Forta's latest CFWACK or Rob Brooks-Bilson's Programming ColdFusionMX. Forta's book is very comprehensive and covers most everything, Rob's book covers the extended essentials and often has realistic code examples that feel like they are lifted out of actual projects - I've found those very helpful. Rob's book seems to be very user-friendly to me.
