Send it as type=html and include a link to the image in the text.  Something
like:

<cfmail to="[EMAIL PROTECTED]" from: [EMAIL PROTECTED]" subject="test"
type="html">
<h1>test!</h1>
<img src="http://www.mydomain.com/myimage.gif">
</cfmail>
