My favorite features are :

File System Gateway 
Think WebDAV, think Content Management,  ... this is porn for
webdevelopers

CFML Asynchronous Gateway
Used with care, this can really blast competition away. But I don't know
how it will affect performance with short running requests. :)

Administrator API
At last we can modify all mappings, odbc settings, through a nice little
setup screen in our web applications.

Sourceless Deployment
Strong Encyption
Debugging Improvements (this is almost as good as a real profiler tool)
Application Event Traps
CFCHART (not tried yet, but gonna check it against GlobFX Swiff Chart
Generator)
Builtin export to PDF (saves me an ActivePDF license per domain)


Features I personally don't care about are:

Flash Forms, XML Forms, Improved Form Validation etc. because I know my
way around with current techniques, and I don't really find them very
usefull in real world examples :)

Event gateways are Enterprise only - although they are present in
Developer Edition too, of course.

Form improvements are in every edition.

Reporting is in every edition - Enterprise brings higher performance.

Sourceless deployment is a bit confusing - J2EE *deployment* is
limited to Enterprise since that requires the J2EE version (which is
Enterprise only). However, you can perform J2EE *packaging* on any
edition.

You can compile to .class files with every edition and therefore you
can distribute your code in a compiled format using any edition.

I suspect this one will end up needing a lot of clarification in the
next month or so!
