I've been stumped on some cfform stuff today too and by the looks of things Flash forms aren't that Flash. They seem pretty constrained, I'm not sure the answers to your questions but I could guess the answer to Q1 is probably 'no', for question 2 you may be able to put a <cfif> tag to either hide or show a tab, 3 - I don't think you can tell which tab you are on, just code within that tab and 4, there is validation as part of the flash forms but it seems to validate when you click submit.
Look at http://www.cfforms.com or check in the Macromedia docs for some more help.
