Version 7 is not "better" or more stable than 6.1. It's the same codebase. Haven't looked at pricing of the two, but if 6.1 is not siginificantly cheaper to license than 7, then I can't conceive of a reason to not skip straight to 7.
At the time we made the decision to skip 6.1 to version 7, we had no plans to use any of the new feature set.
