I'm not sure how far back you need to go, or the level of detail needed, but one of the strongest such resources is the set of Release Notes for each tool: http://www.macromedia.com/support/documentation/en/coldfusion/releasenotes.html If it's instead actual dates of announcement and/or ship, then that's harder... usually I'd go to a press release archive for this, but in ColdFusion's case the official press releases have been on two separate websites (allaire.com and macromedia.com).
