We use Verisign's Payflow system. It gives you a flag with which you can do a "test" run of the card without actually processing it.
Another option (which we don't do) is to allow you to mark off $ against the account temporarily in an "authorization" step. Here you claim that you are about to charge them, but actually don't until later. If you never send the final "collection" hit later, the authorization expires.
