The 301 shouldn't, in theory, hurt your rankings. The part to watch out for is that Google has a tendency to index the new page and not remove the old one so you end up with problems going to Supplemental Results.
The best way to do what you are doing is to redirect products from one manufacturer or another small grouping and see what happens before you redirect your entire product line. That way if there is going to be a problem you can back out of it before you've totally committed yourself.
