AJ, I've got a three part post on my blog I'm working on right now on for setting up multi-instance CF 7 (or 8) on Apache with SSL. I'm waiting on some feedback from Adobe on a little trip up with the SSL, but if you ping me off list I'll drop you an example of my httpd.conf.
