That's because HTML text wraps based on where it is in the HTML page.

Plain text, in plain text emails, doesn't wrap. You need to put in
your
own
line
breaks, like that, to get it to display the way you wish.

So you may need to write some code to step through your text content, 
sniff out where your current line breaks are, and look at the next X 
characters in the string (let's say 80, for example) to see if there are 
line breaks - and insert them, to pretty up your text display.
