Dominic, It might depend on what you're actually trying to achieve with the subdomain.
Through the CT control panel, you can set up subdomain pointers that go into the CT DNS. I use them primarily to direct traffic for subdomains from a CT to a completely different server, though. For instance, www.mediumcool.compoints to my shared space at CT, but dev.mediumcool.com points back to a local server in my office. And that's just set up in the CT Control Panel. Similarly, one of my clients has a production site at CT, and a beta site on another CT server. There's an entry pointing "test.hisDomain.com" in the main CT account to the beta server site.
