You can run multiple sites off one IP. If you need to run SSL you will need
an dedicated IP for each SSL cert or domain. EX: https://yourdoman.com will
need its own IP.

The number of sites that you can host depends on how much your server can
handle. Generally speaking the amount of RAM you have will be the limiting
factor. Obviously if you have sites that cache a lot of stuff in memory i.e.
the application scope your memory consumption will be greater.

It depends. Most companies offer some sort of hosting Control Panel.
Plesk,cPanel  and Helm are common offerings. Or you can install your own.

It depends on the hosting company. IIRC both Kickassvps and viviotech both
provide external firewalls. I highly recommend using an external firewall.
But for AV software it it depends on the company

Again it depends. Jordan @ Viviotech installed ACF for me at no charge. IIRC
you get 2 free hours of support each month @ Viviotech.
