Burn the SP's to a CD and install everything, and remove all of the unnecessary extensions, _before_ plugging in the network cable. Otherwise I guaranteee you will get infected by Nimbda and all the rest before you can even get IIS started. Removing the unnecessary IIS extensions pretty much solves the entire problem of having to worry about the patches.
