If they were created on a Mac, (my memory is hazy - its been 3 years for this...) using Acrobat or Distiller, I think the Mac's default is/was to save ONLY the graphic portion (not text and graphics). A simple setting change on the control panel can fix/change this. (for any new PDFs).
