We've been using a command line .exe from winzip that does a great job. We
have scheduled jobs that look like this:

<CFEXECUTE NAME="C:\progra~1\winzip\wzzip.exe"
  arguments="c:\directory\filenametobewritten.zip
c:\directory\filenametobezipped.txt"
 >
</CFEXECUTE>

Works like a charm!
