It's not as hard as you think... The easiest way to spoof your IP is to go through a proxy. There's tonnes of open proxies on the internet you can use to spoof your IP.

That CGI variable is determined by the IP stack of the host to which you're connecting, and if you were able to "spoof" that value, the host would respond to that IP address instead of yours! The only CGI variables that you can affect from the client are those which begin with the prefix "HTTP_".
