Ok after re-reading your question.

Put it this way the answer is that you would need to know how to run Derby
and install it from within your Application, you would then need to know how
to deal with any errors that arise. Not to mention that it maybe violates
the licensing of Derby when you use it with your Application in this manner.

Your best bet is to install CF, install Derby and create a JDBC connection
to Derby and yes an ODBC would work but not give you the same full
functionality that the JDBC drivers could give you.

If it was me I would go with mySQL or another supported DB, or just upgrade
to CF 8. Either way it sounds like you are going to be over complicating
your development, and your distribution of your application.
