To answer two in one go:

We are using an almost exact copy of our Oracle DB, but in Access format.

We sync using XML via HTTP requests - so they grab a huge string of XML data
from a page on our site to get data from us, and to send info to us, they fake being
a browser, and upload a xml packet back up to a form with a file field in it.

Works quite well.

(btw - just so you know, we didn't build the VB app)

Yes - but does this extent beyond just flat text files that can be stored in there?
(and images?)

In cases where you are providing a relativley complex offline version of an online
app - simple text data is going to be hellish to build a relational program with.

You need to have some sort of DB sitting under it.

While i realise I should read more about FCS - what is so special about the
paradigm that allows this sort of thing to be developed so much easier, than with
Remoting?

Interesting topic! :o)
