Usually because they hack the mail headers to make it appear to come from an address (that usually) doesn't exist.  They also often spoof the originating IP address, so it can be reasonably difficult to trace it back to the original source.

I might add that it's usually not a good idea to reply to spam because if it is actually an email address they expect things from it will confirm to them that your email address is an active one, and you'll be sold onto other lists of confirmed addresses!

Majority of the SPAM that comes through has different a body but you fine

either way instead of banning IP addresses, Email Addresses and Keywords,
you could also put bans in place on domains (if message contains
[EMAIL PROTECTED] then delete it straight away as its spam.

time at the moment to do anything but sneeze (new born, work and Empire
Earth *Good game*).

So if someone wants to write such an app, i'd love to have a copy :)
