Personally I think this one's pretty cool,
http://www.redsquare.com.au/imageit it dynamically creates images based
upon a url string. We use it in most of our sites and pass different
parameters via CF based upon the rules of the page, who's viewing etc.

Here's a couple of samples 
300px wide
http://www.redsquare.com.au/imagineit/redsquare/building.jpg?wid=300&cvt
=jpeg

600px wide
http://www.redsquare.com.au/imagineit/redsquare/building.jpg?wid=600&cvt
=jpeg

A more complex one (crop,size, border, dropshadow, bg color)

Cool thing is you can use .psd, .tif, .bmp, .png, .eps files as the
source images.

Try changing parameters to get an idea of what can be done.
