Another possibility is to write a raw XML HTTP POST handler (in CFMX) that accepts and converts Document/Literal requests, and responds in the same format. You could write that as a Proxy for your existing Web Services and expose just that Proxy for the MS Infopath client. Yes, it would be quite a pain but I believe some folks on this list have built 'raw' Web Services using CF / XML.
